Turkey legs are arguably the best part of the bird, yielding the darker, more flavoursome meat, and are much easier to cook properly compared to the breast which can dry out. Cooked using low and slow methods, such as slow roasting, braising, or confit, will produce rich, tender, fall-off-the-bone turkey meat.
Our turkeys are pasture raised, slow reared bronze birds, reared for around twice the length of time as commercial turkeys. Grown on farm in Leicestershire from day-old poults to maturity at around 6 months, they are generous, with succulent marbled meat and an exceptionally rich flavour.
The birds spend a great amount of time free-ranging and foraging on pesticide-free grassy pastures, which allows them to put down a nice layer of natural fat. They develop a deep, rich flavour and succulent texture due to the marbling of the meat.
The turkeys are a slow-growing breed that produces tasty meat with a good fat level to give a deep rich flavour and excellent cooking.
