Our pork and fennel salami is traditionally made in the style of an Italian Finocchiona salami. This salami has a lovely, long-lasting flavour in which the fennel compliments the sweetness of the pork.
The pork is from organically-certified Oxford Sandy and Black pigs raised on our farm at Fowlescombe in South Devon. Here pigs live a healthy, free-range life in the woodlands, foraging and picking up plenty of wild plant foods as they root around.
Our Pork and Fennel Salami won a Gold Award and the Best New Product Medal from the prestigious British Charcuterie Live Awards 2021.
Serve at room temperature.
